Smashed Mexican Bean & Avocado Toast

Upgrade your avocado toast with this fully-loaded Mexican style version, complete with smashed avocado, pinto beans, salsa and spices for a simple yet spicy meatless meal.

Ingredients:

  • 2 slices vegan whole grain bread
  • 1 large avocado, pitted and skin removed
  • Juice of ½ lime
  • ½ cup cooked pinto beans
  • 2 tbsp Que Pasa Chipotle Salsa
  • ¼ tsp chili powder
  • ⅛ tsp each ground cumin and oregano
  • Salt and pepper, to taste

Directions:

  1. Toast the bread. In a small bowl, mash the avocado and stir in the lime juice. Spread on toast.
  2. In the same bowl, lightly mash the pinto beans (it’s nice to leave some chunks), and stir in the salsa, chili powder, cumin and oregano. Spoon on top of avocado, then season with salt and pepper. Serve immediately.
