The combination of almonds, rice and cinnamon in this Horchata recipe makes for a creamy and delicious drink, and it’s so simple to make — just soak, blend, and strain!

  • 1 cup natural almonds
  • ½ cup uncooked brown rice
  • 1 cinnamon stick
  • 2 to 3 tbsp pure maple syrup
  • ½ tsp pure vanilla extract



  • Fill a large bowl with 4 cups of water and add the almonds, rice and cinnamon stick. Allow to soak for at least one hour (or overnight).
  • Pour the soaked almonds, rice and cinnamon stick, along with the soaking water, into the pitcher of a high-speed blender. Add the maple syrup and vanilla and blend until smooth. Strain the milk through a nut-milk bag, a few layers of cheesecloth, or a fine mesh strainer.
  • Enjoy immediately or refrigerate until ready to use.
