Kale Caesar Bites

Even Mexican-inspired cuisine can’t escape the ubiquitous kale – much to our delight! These Kale Caesar Bites will wow guests at your next potluck, movie night, or tailgate party.

Ingredients:

  • ¼ cup Greek yogurt
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 2 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • ¼ tsp each salt and freshly ground pepper
  • 4 cups stemmed and finely shredded dinosaur kale
  • Que Pasa Yellow Corn Tortilla Chips
  • ¼ cup shaved Parmesan cheese
  • Lemon wedges

Directions:

  1. Whisk the yogurt with olive oil, lemon juice, garlic, Worcestershire sauce, mustard, salt and pepper.
  2. Toss kale with yogurt dressing.
  3. Top tortilla chips with 1 tbsp Kale Caesar.
  4. Garnish with shaved Parmesan.
  5. Serve on large platter with lemon wedges.
